  • 3 cups cooked chopped chicken
  • 20 oz canned pineapple tidbits (drained)
  • 1 cup finely diced celery
  • 1 cup halved red grapes
  • 1 cup halved green grapes
  • 2 cups lightly salted cashew halves & pieces
  • 1 cup ranch dressing
  • 1 cup mayonnaise
  • 1/3 cup reserved pineapple juice

Instructions

  1. Cook the rotini pasta in salted water until al dente. Drain and rinse under cold water.
  2. In a large bowl, combine the chopped chicken, drained pineapple tidbits, celery, grapes, and cashews.
  3. In another bowl, whisk together the ranch dressing, mayonnaise, and reserved pineapple juice until smooth.
  4. Add the dressing to the chicken mixture along with the cooled pasta. Stir until combined.
  5. Chill in the refrigerator for 4–6 hours before serving for optimal flavor.
