  • 2 lb boneless, skinless chicken breast (cut into chunks)
  • 3 bell peppers (cut into chunks)
  • 1 onion (cut into chunks)
  • 2 cups mushrooms
  • 1/3 cup water
  • 1/3 cup vinegar
  • 1/3 cup vegetable oil
  • 5 garlic cloves (minced)
  • 1 tsp thyme
  • 1 tsp Italian seasoning
  • 1 tsp poultry seasoning
  • 1 tsp rosemary
  • 1 tsp salt
  • 1 tsp black pepper

Instructions

  1. In a bowl, mix together water, vinegar, vegetable oil, minced garlic, thyme, Italian seasoning, poultry seasoning, rosemary, salt, and black pepper to create the marinade.
  2. Place the chicken pieces in a large Ziploc bag and pour the marinade over them. Seal the bag and refrigerate for at least 2 hours.
  3. While marinating, prepare the vegetables by cutting them into chunks.
  4. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning on the grill.
  5. Thread alternating pieces of marinated chicken and vegetables onto each skewer.
  6. Preheat your grill to medium-high heat and cook the kabobs for about 15–20 minutes until the chicken is cooked through.
  7. Serve immediately and enjoy!
