  • 2 teaspoons Active Dry Yeast
  • 1 tablespoon Honey (or white sugar)
  • 1 cup Warm Water
  • 3 cups Bread Flour
  • 1 teaspoon Sea Salt
  • 3 tablespoons Extra-Virgin Olive Oil
  • 2 tablespoons Vegan Butter
  • 2 tablespoons Fresh Rosemary
  • 3 cloves Fresh Garlic
  • 1 teaspoon Finishing Salt
  • 2 tablespoons Additional Olive Oil

Instructions

  1. In a mixing bowl, combine warm water and honey. Sprinkle the yeast over it and let sit for 5 minutes until frothy.
  2. In another bowl, mix bread flour and sea salt. Make a well in the center.
  3. Pour the yeast mixture into the well along with 3 tablespoons of olive oil. Stir to form a sticky dough.
  4. Knead the dough on a floured surface for 5–7 minutes until smooth. Place in an oiled bowl, cover, and let rise in a warm area for about 1 hour until doubled.
  5. Preheat the oven to 400°F (200°C) and grease a muffin tray with olive oil.
  6. After rising, punch down the dough and divide it into equal portions. Shape into balls and place them in the muffin tray.
  7. Melt vegan butter with minced garlic over low heat and brush over each muffin ball generously.
  8. Sprinkle rosemary on top and bake for about 20 minutes until golden brown.
