  • 4 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 tablespoons honey
  • 1 teaspoon dried oregano
  • 1/2 cup plain Greek yogurt
  • Fresh vegetables for serving (like cucumber, tomatoes, olives)
  • 1 teaspoon lemon zest
  • 1 tablespoon red apple vinegar
  • 1 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 4 garlic cloves (minced)
  • 2 tablespoons fresh chopped parsley
  • 1 cup finely diced cucumber
  • 1/2 cup tomato (finely diced)
  • 1/4 cup kalamata olives (finely diced)
  • 1/4 cup green olives (finely diced)
  • 1 tablespoon honey for tomato-olive relish
  • 1 tablespoon olive oil for tomato-olive relish
  • 2 tablespoons minced fresh parsley for tomato-olive relish

Instructions

  1. In a mixing bowl, whisk together olive oil, lemon juice, honey, oregano, salt, pepper, and minced garlic. Add chicken chunks and coat thoroughly. Marinate for at least 30 minutes in the fridge.
  2. Mix Greek yogurt with lemon juice, minced cucumber, dill, salt, and pepper in another bowl; refrigerate until ready to serve.
  3. Combine diced cucumber, tomatoes, kalamata olives, green olives, lemon juice, honey, olive oil, parsley in a separate bowl to create the tomato-olive relish.
  4. Preheat your grill over medium-high heat. Thread marinated chicken onto skewers and grill for about 10–15 minutes until cooked through and slightly charred.
  5. Serve skewers hot alongside the yogurt dip and tomato-olive relish.
