  • 4 medium yellow onions
  • 1 lb ground beef (or lentils/mushrooms)
  • 1 cup short grain or Arborio rice
  • 2 cloves garlic
  • 1 cup grated tomato
  • 2 tbsp tomato paste
  • 2 tbsp lemon juice
  • 1/4 cup fresh chopped parsley
  • 1/4 cup fresh chopped mint
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 tbsp chicken stock paste (or vegetable stock)
  • 1 tsp dried oregano
  • 1 can canned Roma or whole tomatoes
  • 1 cup water

Instructions

  1. Trim the tops and bottoms of the onions. Boil them in salted water for 10-15 minutes until softened. Let cool.
  2. For the sauce, blend canned tomatoes, water, tomato paste, lemon juice, salt, and pepper until smooth; set aside.
  3. In a skillet over medium heat, sauté diced onions and garlic in olive oil until fragrant. Add ground beef (or substitute) and cook until browned. Stir in grated tomato, soaked rice, lemon juice, herbs, chicken stock paste (or vegetable stock), salt, pepper, and oregano. Simmer for about 8-10 minutes.
  4. Carefully separate onion layers and fill each with the rice mixture. Roll tightly to secure.
  5. Preheat oven to 425°F (220°C). Spread some sauce in a baking dish and place stuffed onions upright inside. Cover with remaining sauce. Bake covered for 30 minutes, then uncover and bake for an additional 25-30 minutes until golden brown.
