  • 1 rack (3 pounds) beef ribs
  • 1 cup BBQ sauce (optional)
  • 2 teaspoons brown sugar or sweetener
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Prepare your grill for indirect grilling by preheating it to medium-low heat (250-300°F).
  2. Pat the ribs dry and optionally remove the membrane from the bone side.
  3. Generously apply the spice rub on both sides of the ribs.
  4. Place the seasoned ribs on the grill, bone-side down, over indirect heat.
  5. Close the lid and cook for about 1.5 to 2 hours, adjusting time based on thickness.
  6. Check doneness using tongs; they should bend easily, and internal temperature should be around 190-203°F for optimal tenderness.
  7. For saucy ribs, brush with BBQ sauce during the last 10-15 minutes of grilling.
  8. Remove from grill and let rest for at least 20 minutes before serving.
