Grilled Chicken Margherita is a delightful and healthy dish that combines tender grilled chicken breasts with creamy melted mozzarella, fresh basil pesto, and juicy cherry tomatoes. This recipe is not only quick to prepare—taking just 30 minutes from start to finish—but it also features simple ingredients that come together for an impressive meal.

  • 4 boneless skinless chicken breasts
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 4 slices mozzarella cheese
  • ½ cup basil pesto
  • ½ cup cherry tomatoes, halved
  • 1 tablespoon fresh lemon juice
  • ½ cup packed basil leaves, thinly sliced
  • Cracked black pepper for garnish

Instructions

  1. In a large bowl, combine the chicken breasts with salt, pepper, olive oil, garlic powder, and Italian seasoning. Toss until evenly coated.
  2. Preheat the grill or grill pan over medium-high heat. Grill the chicken for about 6-8 minutes on each side until fully cooked. During the last minute of cooking, top each breast with mozzarella cheese and close the lid to melt.
  3. While grilling, mix cherry tomatoes with lemon juice and sliced basil in a bowl.
  4. Once grilled, remove chicken from heat and top with pesto followed by the tomato mixture. Garnish with cracked black pepper before serving.
