  • 300 g Tennis biscuits
  • 150 g unsalted butter (melted)
  • 700 g cream cheese
  • 250 g castor sugar
  • 4 extra-large eggs
  • 1 tsp vanilla extract
  • 200 ml whipping cream
  • 500 g fresh guavas (for the compote)
  • 80 g sugar (for the compote)
  • 1 tbsp lime juice (for the compote)

Instructions

  1. Preheat your oven to 160°C (320°F). In a mixing bowl, combine crushed Tennis biscuits with melted unsalted butter and press into the bottom of a springform pan.
  2. Beat cream cheese and castor sugar until smooth. Add eggs one at a time, followed by vanilla extract and whipping cream; mix until well combined.
  3. Pour filling over the prepared crust and bake for about 50 minutes or until slightly jiggly in the center. Leave in the oven with the door ajar for another hour.
  4. For the guava compote, heat chopped guavas, sugar, and lime juice in a saucepan until soft and syrupy. Let cool before spreading over the cheesecake.
  5. After cooling completely, remove from the pan, top with sliced guavas, and serve.
