  • 1 cup sweetened shredded coconut (optional)
  • 1 package (8 oz) cream cheese, softened
  • 1 cup unsalted butter, softened
  • 3 cups powdered sugar
  • 1 tsp vanilla extract
  • 23 tbsp pineapple juice (reserved from the can)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, combine flour, sugar, baking soda, and salt. Mix well.
  3. Stir in eggs, vanilla extract, and crushed pineapple with juice until well blended.
  4. Fold in optional chopped pecans and shredded coconut if desired.
  5. Divide the batter between the prepared pans and bake for 30-35 minutes or until a toothpick comes out clean.
  6. Let the cakes cool for 10 minutes before transferring them to wire racks to cool completely.
