  • 1 cup diced chicken breast
  • 1 cup pineapple tidbits (well-drained)
  • 1/2 cup green bell pepper (finely chopped)
  • 1/2 cup red bell pepper (finely chopped)
  • 1/4 cup red onion (finely diced)
  • 1/2 cup teriyaki sauce
  • 1 tablespoon honey
  • 1 teaspoon garlic powder
  • 1/4 cup mayonnaise
  • 1 tablespoon apple cider vinegar

Instructions

  1. Cook the tortellini in a large pot of salted boiling water according to package instructions until tender. Drain and rinse under cold water, then toss with a drizzle of oil.
  2. While cooking, chop the green bell pepper, red bell pepper, and red onion into uniform pieces.
  3. In a medium bowl, whisk together teriyaki sauce, honey, garlic powder, mayonnaise, and apple cider vinegar until smooth.
  4. In a large mixing bowl, combine cooked tortellini, diced chicken breast, pineapple tidbits, chopped peppers, and red onion. Pour half of the dressing over the mixture and gently fold to combine evenly.
