  • Double crust pie dough (chilled overnight)
  • 4 cups fresh blueberries (do not thaw if frozen)
  • 2 cups wild blueberries (do not thaw if frozen)
  • 3/4 cup granulated sugar
  • 5 tablespoons cornstarch
  • 1 teaspoon fresh lemon zest
  • 1 tablespoon fresh lemon juice
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1/4 teaspoon fine sea salt
  • 1 tablespoon unsalted butter (diced)
  • Egg wash: 1 large egg yolk mixed with 1 tablespoon heavy cream or milk
  • Turbinado or coarse sugar for sprinkling

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Roll out chilled double crust pie dough on a floured surface until about 1/8 inch thick.
  3. In a mixing bowl, combine fresh and wild blueberries, granulated sugar, cornstarch, lemon zest, lemon juice, cinnamon, nutmeg, and sea salt. Toss gently to coat the blueberries without mashing.
  4. Place one rolled-out crust in your pie dish and pour in the blueberry filling evenly. Dot with diced butter.
  5. Cover with the second rolled-out crust, crimp edges to seal, and cut slits into the top for steam to escape.
  6. Brush egg yolk mixture over the top crust and sprinkle with turbinado or coarse sugar.
  7. Bake for 20 minutes at 425°F (220°C), then reduce temperature to 350°F (175°C) and bake for an additional 50–60 minutes until bubbly and golden brown.
  8. Allow cooling on a wire rack before serving.
