  • 2 cups Bread Flour
  • 2 cups All-Purpose Flour

  • 6 tbsp Olive Oil (divided)
  • 1 jar Raspberry Preserves
  • 2 cups Confectioners’ Sugar
  • Whole Milk (as needed)

Instructions

  1. Combine warm water and sugar in a bowl; add yeast and let sit until frothy (5-10 minutes).
  2. In another bowl, mix bread flour, all-purpose flour, and salt.
  3. Add yeast mixture and 4 tablespoons olive oil to dry ingredients; stir to form a dough.
  4. Knead on a floured surface for 8-10 minutes until smooth and elastic; place in an oiled bowl and let rise until doubled (about 1 hour).
  5. Punch down the dough, transfer to a baking sheet lined with parchment, and flatten into an even layer.
  6. Create indentations in the dough; fill with raspberry preserves.
  7. Preheat oven to 375°F and bake for about 22 minutes until golden brown.
  8. Mix confectioners’ sugar with whole milk to create a glaze; drizzle over warm focaccia before slicing.
