  • 8 lemons (zested)
  • 4 cups water
  • 3 cups granulated sugar

Instructions

  1. Peel the lemons carefully, avoiding the white pith, and place the peels in a glass container. Add the lemon juice to submerge the peels.
  2. Seal the container and store it in a cool, dark place for at least two weeks; shaking every few days.
  3. To make simple syrup, dissolve sugar in water over medium heat until fully dissolved. Let it cool.
  4. Strain the infused lemon mixture through a fine strainer into another bowl, pressing down on the peels to extract all liquid.
  5. Combine the strained liquid with cooled simple syrup and transfer to glass bottles.
