Grilling steak is an art that can elevate any meal into a delicious celebration. This simple guide teaches you how to grill the perfect steak, ensuring tender, juicy results every time.

  • 1 lb. 2" thick steak
  • 1 teaspoon kosher salt
  • ¾ teaspoon black pepper

Instructions

  1. Salt the Steak: Season liberally with kosher salt, place on a wire rack over a rimmed sheet pan, and refrigerate for up to 4 hours.
  2. Fire Up the Grill: Preheat your grill to around 500°F while cleaning the grates.
  3. Prepare the Steak: Remove from fridge, pat dry, and season both sides with salt and pepper.
  4. Let It Rest: Allow steak to sit at room temperature for 20-30 minutes.
  5. Set Up Your Grill: Once preheated to approximately 550°F, turn off one side (or middle) burners.
  6. Place on Grill: Position steak over unlit burners for indirect heat.
  7. First Cooking Phase: Cover and cook for 3-4 minutes; rotate 90 degrees and cook another 3-4 minutes.
  8. Flip and Finish Cooking: Flip the steak, cooking for an additional 3 minutes; rotate again for another 2-3 minutes until within 10°F of your desired doneness.
  9. Remove and Rest: Transfer steak to a plate, cover loosely with foil, and let rest for 10-15 minutes.
  10. Slice and Enjoy: Slice against the grain and serve with your favorite sides.
