  • 8 oz dark chocolate (70% cacao or higher)
  • 12 oz cream cheese, softened
  • 1 cup granulated sugar
  • 2 tsp vanilla extract
  • 1/4 cup unsalted butter, melted
  • 1 1/2 cups graham cracker crumbs
  • 2 cups fresh raspberries
  • 1 tbsp agar-agar powder mixed with 1/4 cup water

Instructions

  1. Preheat oven to 325°F (160°C). Mix graham cracker crumbs with melted butter; press into the bottom of a springform pan.
  2. Melt dark chocolate in a microwave or double boiler until smooth.
  3. Beat softened cream cheese with sugar until fluffy; mix in vanilla and melted chocolate.
  4. Gently fold in half of the fresh raspberries.
  5. Dissolve agar-agar in water over medium heat; mix into the cheesecake batter.
  6. Pour batter over crust; bake for 45 minutes or until slightly jiggly in the center.
  7. Cool at room temperature, then refrigerate for at least four hours before serving.
