1 lb chicken breast or thighs (thinly sliced)
1 cup flour (for coating)
salt and pepper (to taste)
1 cup pineapple chunks (fresh or canned)
1/2 cup pineapple juice
1/4 cup soy sauce
2 tbsp brown sugar (or honey)
1 tbsp grated ginger
2 cloves garlic (minced)
1 tbsp cornstarch (dissolved in 2 tbsp water)
2 cups cooked rice (white or brown)
sesame seeds (optional garnish)
green onions (optional garnish)
Instructions
Season chicken pieces with salt and pepper. Dredge them in flour until coated evenly.
Heat oil in a skillet over medium-high heat. Cook chicken until golden brown and cooked through, about 3-4 minutes per side. Once done, set aside.
In the same skillet, add a little more oil if necessary. Sauté grated ginger and minced garlic until fragrant, around 30 seconds.
Pour in pineapple juice, soy sauce, and brown sugar. Bring this mixture to a simmer before adding in pineapple chunks.
Whisk in the cornstarch mixture. Continue cooking until the sauce thickens, which should take about 2 minutes.
Return cooked chicken to the skillet. Coat well with the sauce and let everything simmer together for another 2 minutes.
Serve your delicious pineapple chicken over cooked rice. Garnish with sesame seeds and chopped green onions if desired.
