Irresistible Pineapple Chicken and Rice is a vibrant, flavorful dish that combines tender chicken with sweet pineapple in a quick, easy-to-make recipe.

  • 1 lb chicken breast or thighs (thinly sliced)
  • 1 cup flour (for coating)
  • salt and pepper (to taste)
  • 1 cup pineapple chunks (fresh or canned)
  • 1/2 cup pineapple juice
  • 1/4 cup soy sauce
  • 2 tbsp brown sugar (or honey)
  • 1 tbsp grated ginger
  • 2 cloves garlic (minced)
  • 1 tbsp cornstarch (dissolved in 2 tbsp water)
  • 2 cups cooked rice (white or brown)
  • sesame seeds (optional garnish)
  • green onions (optional garnish)

Instructions

  1. Season chicken pieces with salt and pepper. Dredge them in flour until coated evenly.
  2. Heat oil in a skillet over medium-high heat. Cook chicken until golden brown and cooked through, about 3-4 minutes per side. Once done, set aside.
  3. In the same skillet, add a little more oil if necessary. Sauté grated ginger and minced garlic until fragrant, around 30 seconds.
  4. Pour in pineapple juice, soy sauce, and brown sugar. Bring this mixture to a simmer before adding in pineapple chunks.
  5. Whisk in the cornstarch mixture. Continue cooking until the sauce thickens, which should take about 2 minutes.
  6. Return cooked chicken to the skillet. Coat well with the sauce and let everything simmer together for another 2 minutes.
  7. Serve your delicious pineapple chicken over cooked rice. Garnish with sesame seeds and chopped green onions if desired.
