  • 2 1/2 teaspoons baking powder
  • 2 teaspoons xanthan gum
  • 1 teaspoon ground cardamom
  • 1 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1/4 cup sour cream
  • 1/4 cup hot water
  • 2 tablespoons unsalted butter, melted (for filling)
  • 1/4 cup golden monk fruit or erythritol
  • 1 tablespoon cinnamon
  • 1/4 teaspoon ground nutmeg
  • pinch of salt
  • 2 tablespoons butter, melted (for frosting)
  • 1/2 cup powdered sweetener
  • 2 teaspoons vanilla
  • 8 oz cream cheese, softened
  • 1/2 cup butter, softened

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. In a medium bowl, combine almond flour, protein powder, sugar-free sweetener, baking powder, xanthan gum, ground cardamom, and salt. Mix until well combined.
  3. Add melted butter, sour cream, and hot water; stir until you have a cohesive dough.
  4. Place the dough between two sheets of parchment paper. Roll it into a rectangle about 1/4 inch thick.
  5. In a small bowl, mix together golden monk fruit (or erythritol), cinnamon, ground nutmeg, and pinch of salt to create the filling.
  6. Spread 2 tablespoons of melted butter over the dough and sprinkle the cinnamon mixture on top.
  7. Starting from one long edge, tightly roll up the dough over the filling. Cut crosswise into even slices (about 1 inch thick) and arrange them on a parchment-lined baking tray.
  8. Bake for 16 to 20 minutes, or until golden brown.
  9. In a small bowl, combine melted butter, powdered sweetener, and vanilla for the icing. Drizzle this over the baked cinnamon rolls once they cool slightly.
  10. In a medium bowl, beat softened cream cheese, butter, and powdered sweetener until light and fluffy. Spread generously over cooled cinnamon rolls.
