  • 1/2 cup light-brown sugar

  • 1 tsp vanilla extract
  • 1 (14 oz) can sweetened condensed milk
  • 1 Tbsp lemon zest
  • 1/3 cup fresh lemon juice
  • 2 large egg yolks
  • 1/2 tsp lemon extract

Instructions

  1. Preheat oven to 350°F.
  2. In a bowl, whisk together flour, oats, salt, and baking soda; stir in sugars.
  3. Combine melted butter and vanilla; mix into dry ingredients until moistened.
  4. Press half of the mixture into an 8×8-inch baking dish; bake for 15 minutes.
  5. Whisk together sweetened condensed milk, lemon zest, lemon juice, egg yolks, and extract in another bowl.
  6. Pour lemon filling over baked crust and sprinkle remaining crumb mixture on top; bake for an additional 23-26 minutes until golden.
  7. Cool at room temperature then refrigerate for at least 30 minutes before cutting into squares.
