Ingredients

  • 1 can chickpeas (15 oz, rinsed and drained)
  • ¼ cup fresh lemon juice
  • 1 garlic clove
  • ½ teaspoon fine sea salt
  • ½ cup tahini
  • 2 tablespoons ice water (more as needed)
  • 1 tablespoon extra-virgin olive oil
  • Toppings: olive oil, sumac (or paprika), chopped parsley, olives, baby tomatoes

Instructions

  1. Rinse the chickpeas under cool water in a fine-mesh strainer.
  2. In a food processor or high-powered blender, combine chickpeas, lemon juice, garlic, salt, tahini, and cumin. Blend until smooth.
  3. Gradually add ice water while processing until you reach your desired consistency. Drizzle in olive oil while blending.
  4. Taste and adjust seasoning with more salt or lemon juice as needed.
  5. Transfer to a serving bowl and create swooshes on top. Drizzle with olive oil and garnish with toppings before serving.
