  • 2 1/4 cups all-purpose flour
  • 1 teaspoon sea salt
  • 1 medium egg
  • 1/2 cup (120g) water
  • 2 tablespoons extra virgin olive oil
  • 8 ounces lean ground beef or lamb
  • 1 onion, finely chopped
  • sea salt, to taste
  • freshly ground black pepper
  • 16 ounces plain whole milk yogurt
  • 2 to 3 garlic cloves, minced
  • 1/4 cup extra virgin olive oil
  • 1 tablespoon Turkish red pepper paste
  • 1 teaspoon Aleppo pepper
  • 2 teaspoons dried mint, plus more for serving
  • 1 teaspoon sumac, plus more for serving

Instructions

  1. Prepare the dough by mixing flour, sea salt, beaten egg, water, and olive oil until smooth. Knead for about 5 minutes, then let rest for 30 minutes.
  2. In a separate bowl, combine ground beef or lamb with grated onion, salt, and pepper.
  3. Roll out the dough thinly and cut into squares. Place a teaspoon of filling in each square and fold to seal.
  4. Boil manti in salted water for 5-7 minutes until they float; remove using a slotted spoon.
  5. Mix yogurt with minced garlic and season with salt.
  6. Heat olive oil in a saucepan; stir in pepper paste and spices until fragrant.
  7. Serve cooked manti topped with yogurt sauce and spiced oil.
