  • ¾ cup sour cream
  • 1 package (8 ounces) cream cheese (softened)
  • ½ cup unsalted butter (softened)
  • ¼ cup honey
  • 3 cups confectioners’ sugar
  • ½ teaspoon almond extract
  • ½ teaspoon vanilla extract
  • ¼ teaspoon kosher salt

Instructions

  1. Preheat the oven to 325°F (163°C). Line a 9×9 baking pan with parchment paper and lightly spray it.
  2. Whisk together flour, baking powder, salt, and nutmeg in a bowl; set aside.
  3. In an electric mixer, beat softened butter until fluffy. Add sugar and honey; mix until well combined.
  4. Incorporate eggs one at a time, mixing well after each addition.
  5. Gradually add dry ingredients to the wet mixture, followed by vanilla extract and sour cream; mix until just combined.
  6. Pour batter into the prepared pan and smooth the top. Bake for 40–50 minutes or until a toothpick comes out clean.
  7. Allow cake to cool completely before cutting into cubes.
  8. For the frosting, beat cream cheese and butter until fluffy, then mix in honey, almond extract, vanilla extract, and confectioners’ sugar until smooth.
  9. Layer cake cubes and frosting in mason jars; top with sliced almonds and other decorations if desired.
