  • 8.5 ounces canned corn (drained)
  • 1 ½ cups cooked chicken, shredded
  • 8 ounces salsa (store-bought or homemade)
  • 2 tablespoons taco seasoning mix
  • 15 ounces black beans (rinsed and drained)
  • 2 cups shredded colby jack cheese
  • Fresh cilantro leaves
  • Diced tomatoes

Instructions

  1. Heat oil in a cast-iron skillet over medium heat. Fry each tortilla for about 30 seconds on each side until golden brown and crispy. Drain on paper towels.
  2. In a mixing bowl, combine shredded chicken, canned corn, taco seasoning mix, and black beans; mix well.
  3. Spoon the filling mixture onto each crispy tortilla. Top with salsa and sprinkle with shredded cheese.
