  • 1 large fresh nectarine
  • 5 ounces fresh arugula
  • 3 ounces aged white cheddar cheese
  • 1/3 cup slivered almonds
  • 1 tablespoon honey
  • Juice of half a lemon
  • 1/4 cup olive oil
  • 2 tablespoons salted butter (or alternative)

Instructions

  1. In a large serving bowl, whisk together honey, lemon juice, cinnamon, and salt. Gradually add olive oil while whisking until smooth. Set aside.
  2. Slice the nectarine into thin slices.
  3. Heat a nonstick pan over medium heat and melt the butter. Arrange the nectarine slices in a single layer cooking for about 2 minutes before flipping. Baste with melted butter for another 2 minutes and then cool.
  4. Toast slivered almonds in the same pan until golden.
  5. In the serving bowl, combine arugula with the vinaigrette followed by sautéed nectarines, toasted almonds, and chunks of cheddar. Toss gently before serving.
