  • 1 cup mixed dried fruits (raisins, currants, or chopped dried cherries)
  • 1/2 cup candied citrus peel, chopped

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a greased and floured 9-inch round cake pan.
  2. In a bowl, whisk together the flour, baking powder, baking soda, salt, and spices.
  3. In another bowl, cream together the softened butter and sugar until fluffy. Add eggs one at a time, mixing well after each addition. Then stir in the molasses and buttermilk.
  4. Gradually incorporate the dry mixture into the wet ingredients using a rubber spatula until just combined.
  5. Fold in nuts, dried fruits, and candied citrus peel.
  6. Pour batter into the prepared pan and bake for about 75 minutes or until a toothpick inserted comes out clean.
  7. Let cool for 15 minutes before transferring to a wire rack. Wrap tightly and age for at least one week before serving.
