  • 500 g ground chicken
  • 1 egg
  • ½ cup breadcrumbs (preferably panko)
  • ½ cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 Tbsp fresh parsley, chopped
  • 1 tsp onion powder
  • ½ tsp paprika
  • Salt and pepper, to taste
  • 2 Tbsp butter
  • 2 Tbsp flour
  • 1½ cups milk
  • ¾ cup Parmesan, grated (for sauce)
  • ½ cup mozzarella, shredded (for sauce)
  • Salt, pepper, and a pinch of nutmeg (for sauce)

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. In a mixing bowl, combine ground chicken, egg, breadcrumbs, half of the Parmesan, garlic, salt, pepper, onion powder, paprika, and parsley. Mix gently until just combined.
  3. Shape the mixture into medium-sized balls and place them on a parchment-lined baking tray.
  4. Bake for 20–25 minutes until golden brown and cooked through.
  5. Meanwhile, melt butter in a saucepan over medium heat. Whisk in flour to create a roux for about 1 minute.
  6. Gradually add milk while whisking until smooth. Stir in remaining Parmesan and adjust seasoning.
  7. Pour the creamy sauce over the baked chicken bombs and broil for an additional 3–5 minutes until bubbling.
