  • ¼ teaspoon cream of tartar or ½ teaspoon lemon juice/vinegar

  • Red gel food coloring
  • Blue gel food coloring

  1. Preheat your oven to 200°F (90°C) and line two baking sheets with parchment paper.
  2. In a clean mixing bowl at room temperature, beat egg whites on medium speed until frothy. Gradually add cream of tartar and salt.
  3. Increase speed to high and slowly add superfine sugar, one tablespoon at a time, beating until stiff peaks form (about 5–7 minutes).
  4. Divide meringue into two bowls; color one with red gel and the other with blue gel food coloring, folding gently until combined.
  5. Pipe small kisses onto prepared baking sheets using separate piping bags fitted with star tips.
  6. Bake for approximately 75 minutes or until dry and crisp. Turn off the oven and let meringues cool completely inside.
