Ingredients

  • 45 C strawberries
  • 1 & 1/3 C blueberries
  • 1 12 oz frozen pound cake (thawed)
  • 3 C water (boiling)
  • 2 pkgs plant-based strawberry jell-o (4-serving pkg)
  • 2 pkgs plant-based blueberry jell-o (4-serving pkg)
  • 2 C ice cubes
  • 2 8-oz pkg cream cheese (softened)
  • 1/4 C granulated white sugar
  • 16 oz Cool Whip

Instructions

  1. Slice strawberries and wash blueberries.
  2. Prepare the pound cake base by cutting it into slices and lining them in a baking dish.
  3. Mix 1 & 1/2 cups boiling water with plant-based strawberry jell-o mix in a medium bowl; stir for at least 2 minutes until dissolved.
  4. In a measuring cup, fill with ice and add water until brimming; pour into jell-o mixture and stir until melted.
  5. Add 1 cup of sliced strawberries to this mixture and place in the freezer for about 5 minutes.
  6. Pour the strawberry jell-o mixture over the pound cake slices in the dish and refrigerate to allow it to set.
  7. Mix another 1 & 1/2 cups boiling water with plant-based blueberry jell-o mix until dissolved.
  8. Fill a measuring cup with ice and top with water; mix into jell-o until melted.
  9. Add another cup of sliced strawberries along with 2/3 cup blueberries; freeze for about 5 minutes.
  10. Pour blueberry jell-o mixture over chilled pound cake/strawberry layer and place back in refrigerator to set.
  11. Beat softened cream cheese with granulated sugar until light and fluffy using an electric mixer.
  12. Stir in Cool Whip until well-combined.
  13. Spread cream cheese/Cool Whip topping over chilled layers in baking dish, smoothing out evenly.
  14. Decorate the top with remaining strawberries and blueberries as desired.
