  • 1/8 teaspoon baking soda
  • 1/4 teaspoon fine sea salt
  • 1 large egg
  • 1 egg yolk (at room temperature)
  • 1 1/2 teaspoons vanilla extract
  • 1 cup vegan marshmallows crème
  • 1 cup semisweet chocolate chips

Instructions

  1. Preheat your oven to 350°F and line an 8 by 8-inch metal pan with parchment paper.
  2. Melt the unsalted butter in a microwave-safe bowl. Stir in brown sugar and peanut butter until smooth.
  3. In another bowl, mix flour, graham cracker crumbs, baking powder, baking soda, and salt.
  4. Whisk the eggs into the peanut butter mixture one at a time, followed by the vanilla extract.
  5. Gradually incorporate dry ingredients until just combined.
  6. Spread two-thirds of the dough into the pan, dollop vegan marshmallows crème on top, sprinkle with chocolate chips, then cover with remaining dough.
  7. Bake for 26-28 minutes until edges are golden and center is slightly jiggly.
  8. Allow cooling completely before cutting into squares.
