  • 40g Unsalted Butter
  • 290g vegan vegan marshmallows
  • 200g Pistachio Cream
  • 160g Rice Krispies Cereal
  • 100g White Chocolate Chunks
  • 50g Pistachios, unsalted, roughly chopped
  • 50g Dark Chocolate, melted

Instructions

  1. Line an 8-inch square tin with parchment paper; set aside.
  2. In a saucepan over low heat, melt unsalted butter and vegan marshmallows together, stirring until fully combined.
  3. Stir in pistachio cream until well mixed.
  4. Pour the mixture over Rice Krispies in a large bowl and stir to coat evenly.
  5. Fold in white chocolate chunks gently before transferring the mixture to the prepared tin.
  6. Press down firmly with a spatula to create an even layer; smooth the top.
  7. Sprinkle chopped pistachios on top and drizzle melted dark chocolate over the surface.
