  • 2 cups cooked jasmine rice (preferably day-old)
  • 3 cups shredded cabbage (mix of green and red)
  • 1 cup sliced cucumber
  • 1 red bell pepper, thinly sliced
  • 1 medium carrot, grated or julienned
  • 1/2 cup chopped sugar snap peas
  • 2 green onions, sliced
  • 1 tbsp sesame oil
  • 2 tbsp peanut butter or tahini
  • 2 tbsp soy sauce or tamari
  • 2 tbsp rice vinegar
  • 2 tbsp lime juice
  • 1 tbsp honey
  • 2 tsp chili crisp
  • 1/2 inch piece ginger, grated
  • Salt and pepper, to taste

Instructions

  1. Heat 1 tablespoon of sesame oil in a wok or large skillet over medium-high heat. Add the cooked jasmine rice and stir-fry until crispy and golden brown (about 5-7 minutes). Allow it to cool slightly.
  2. In a mixing bowl, whisk together peanut butter (or tahini), soy sauce (or tamari), rice vinegar, lime juice, honey, grated ginger, chili crisp, salt, and pepper until smooth.
  3. In another large bowl, combine shredded cabbage, cucumber slices, bell pepper strips, grated carrot, sugar snap peas, and green onions.
  4. Add the cooled crispy rice to the vegetable mixture and pour the dressing over it. Toss everything together until well combined.
  5. Serve your salad in dishes and garnish with toasted sesame seeds if desired.
