  • 2 1/2 tablespoons sugar
  • 1/2 teaspoon vanilla extract
  • 1 cup mascarpone cheese (room temperature)
  • 2/3 cup heavy cream
  • 56 ladyfingers
  • 1/4 cup cold-brewed coffee
  • 1 1/4 cups fresh raspberries
  • Cocoa powder (for dusting)

Instructions

  1. In a heatproof bowl, whisk together egg yolks and sugar until pale yellow. Place over simmering water and whisk constantly for about 5-7 minutes until thickened. Let cool slightly.
  2. Stir vanilla into the cooled mixture, then beat in mascarpone until smooth. In another bowl, whip heavy cream to stiff peaks and fold into the mascarpone mixture gently.
  3. Lightly soak ladyfingers in cold-brewed coffee and layer them in serving glasses. Add a layer of mascarpone mixture followed by raspberries; repeat layers, finishing with mascarpone on top. Dust with cocoa powder before refrigerating for at least one hour.
