  • 2 sticks unsalted butter, at room temperature

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a mixing bowl, whisk together cocoa powder, flour, baking powder, baking soda, and salt.
  3. In another bowl, mix sugar with melted butter until creamy. Add vegetable oil, eggs (one at a time), buttermilk, vanilla extract, red gel food coloring, hot coffee or boiling water, and vinegar. Mix until smooth.
  4. Gradually fold the dry ingredients into the wet mixture until just combined; avoid overmixing.
  5. Divide batter between prepared pans and bake for about 40 minutes or until a toothpick comes out clean. Cool in pans for about 10 minutes before transferring to cooling racks.
  6. For frosting: Beat cream cheese and softened butter until fluffy; gradually add powdered sugar and mix until well combined.
  7. Once cakes are cool, frost the top of one layer before placing the second layer on top. Frost the top and sides smoothly.
