  • 1 ½ cups graham cracker crumbs
  • ¼ cup sugar
  • ½ cup butter, melted
  • 3 (8 oz) packages cream cheese, softened
  • 1 ½ cups sugar
  • 4 large eggs
  • 3 tablespoons unsweetened cocoa powder
  • 1 cup sour cream
  • ½ cup whole buttermilk
  • 2 teaspoons vanilla extract
  • 1 teaspoon white vinegar
  • 2 (1 oz) bottles of red food coloring

Instructions

  1. Preheat your oven to 325°F.
  2. In a bowl, mix graham cracker crumbs, sugar, and melted butter. Press into the bottom of a greased springform pan.
  3. In another bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition.
  4. Mix in cocoa powder, sour cream, buttermilk, vanilla extract, white vinegar, and red food coloring until combined.
  5. Pour the batter into the crust and bake for about 1 hour and 15 minutes at 300°F until set but slightly jiggly in the center.
  6. Let cool for about 10 minutes before removing from the pan; cool completely on a wire rack.
  7. For frosting, beat together cream cheese, butter, powdered sugar, and vanilla until smooth; spread over cooled cheesecake.
