  • 4 ears fresh sweet corn
  • 1 jalapeño, finely diced
  • 4 green onions, sliced
  • 1/3 cup cream cheese
  • 1/3 cup sour cream
  • 1/3 cup mayonnaise
  • 2 cups shredded cheese (Mexican blend or cheddar with Monterey Jack)
  • 4 ounces canned fire-roasted chiles (mild)
  • coarse salt
  • chili powder
  • garlic powder

Instructions

  1. Preheat your oven to 375°F (190°C). Husk the corn and broil on a baking sheet until charred. Let cool, then slice off kernels.
  2. In a mixing bowl, combine cream cheese, sour cream, mayonnaise, salt, chili powder, and garlic powder until smooth.
  3. Fold in roasted corn kernels, diced jalapeños, and fire-roasted chiles. Gently mix in shredded cheese.
  4. Transfer mixture to a baking pan and bake for 30-35 minutes until hot and bubbly.
