  • 1 1/2 medium red bell peppers
  • 1 (15 oz) can chickpeas, drained and rinsed
  • 3 Tbsp fresh lemon juice
  • 3 Tbsp tahini
  • 2 cloves garlic
  • 1/2 tsp salt
  • 1/4 tsp cumin
  • 2 Tbsp olive oil

Instructions

  1. Preheat your oven's broiler. Line a baking sheet with foil and slice the red bell peppers into quarters. Broil for 10-15 minutes until charred.
  2. Transfer the charred peppers to a resealable bag and let them steam for about 10 minutes before peeling off the skins.
  3. In a food processor, combine chickpeas, lemon juice, tahini, garlic, salt, and cumin. Blend until smooth.
  4. Add roasted pepper pieces and olive oil; pulse until well combined. Adjust consistency by adding water if desired.
  5. Serve hummus drizzled with olive oil and garnished with diced peppers.
