- 1 1/2 medium red bell peppers
- 1 (15 oz) can chickpeas, drained and rinsed
- 3 Tbsp fresh lemon juice
- 3 Tbsp tahini
- 2 cloves garlic
- 1/2 tsp salt
- 1/4 tsp cumin
- 2 Tbsp olive oil
- Preheat your oven's broiler. Line a baking sheet with foil and slice the red bell peppers into quarters. Broil for 10-15 minutes until charred.
- Transfer the charred peppers to a resealable bag and let them steam for about 10 minutes before peeling off the skins.
- In a food processor, combine chickpeas, lemon juice, tahini, garlic, salt, and cumin. Blend until smooth.
- Add roasted pepper pieces and olive oil; pulse until well combined. Adjust consistency by adding water if desired.
- Serve hummus drizzled with olive oil and garnished with diced peppers.
