  • 1/2 cup water (boiled)
  • 1 box instant blueberry Jell-O
  • 1/2 cup lemon juice
  • 1 envelope vegan gelling agent (like agar-agar or pectin)
  • 1 cup milk (divided)
  • 3 tablespoons granulated sugar
  • 1/2 teaspoon pure vanilla extract
  • 1/2 cup water
  • 1 box instant cherry Jell-O

Instructions

  1. In a small bowl, mix boiling water with instant blueberry Jell-O until dissolved. Stir in lemon juice and set aside.
  2. In another bowl, mix instant cherry Jell-O with 1/2 cup of water until dissolved; allow both mixtures to cool.
  3. Sprinkle vegan gelling agent over 1/4 cup of milk in a medium bowl. Heat remaining milk in a saucepan and stir in sugar and vanilla until combined.
  4. Pour heated milk mixture over gelling agent mixture while stirring until dissolved; let cool for about 10 minutes.
  5. Lightly spray shot glasses with cooking spray. Spoon blueberry mixture into glasses and refrigerate until set but not firm (approx. 15 minutes).
  6. Add the white layer by topping each glass with the cooled gelling agent mixture; refrigerate again until set (approx. 10 minutes).
  7. Finally, add cherry mixture on top and refrigerate until firm (around 2 hours).
