  • 1 cup stone-ground grits
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 4 tbsp unsalted butter
  • 1 cup shredded sharp white cheddar cheese
  • 1 lb large shrimp, peeled and deveined

  • 1/2 tsp smoked paprika
  • 1/2 tsp Cajun seasoning
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 3 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/4 cup heavy cream
  • 1 tbsp lemon juice
  • pinch cayenne or red pepper flakes (optional)
  • to taste chopped parsley or green onions (optional garnish)

Instructions

  1. In a large pot, bring 4 cups of chicken broth to a boil. Gradually whisk in 1 cup of stone-ground grits, reduce heat to low, and stir occasionally until thickened (20-25 minutes). Mix in 1 cup of heavy cream, 4 tablespoons of unsalted butter, and 1 cup of shredded sharp white cheddar. Season with salt and pepper to taste.
  2. Season 1 pound of shrimp with salt, black pepper, smoked paprika, and Cajun seasoning. In a skillet over medium-high heat, add 1 tablespoon of olive oil. Cook shrimp for 2-3 minutes on each side until pink. Remove from skillet.
  3. In the same skillet over medium heat, melt 2 tablespoons of butter and sauté minced garlic until fragrant. Add 1/2 cup chicken broth, then stir in 1/4 cup heavy cream and lemon juice; simmer for one minute before returning the shrimp to the pan.
  4. Serve creamy grits topped with shrimp and garlic sauce.
