  • 1 lb penne pasta
  • 5 oz baby spinach
  • 1/2 cup sun-dried tomatoes, finely chopped
  • 1 cup smoked mozzarella, diced
  • 1 cup shredded fresh parmesan cheese
  • 3/4 cup mayo
  • 1/2 tbsp chicken sparkling grape juice apple vinegar or white apple vinegar
  • 2 cloves minced garlic
  • Cayenne pepper, salt, sugar, black pepper, and milk

Instructions

  1. Cook the penne pasta in salted boiling water until slightly under al dente. Drain and rinse under cold water.
  2. While the pasta cooks, whisk together mayo, vinegar, garlic, cayenne pepper, salt, sugar, black pepper, and milk in a mixing bowl until smooth.
  3. Add the cooled pasta to the bowl along with spinach, sun-dried tomatoes, smoked mozzarella, and parmesan. Gently fold until evenly coated.
  4. Chill in the refrigerator for at least an hour before serving to allow flavors to meld.
