  • 1/4 cup granulated sugar

  • 12 tablespoons unsalted butter (melted)
  • 1 ⅓ cups semisweet chocolate chips
  • 3/4 cup + 1 ½ tablespoons sweetened condensed milk
  • 2 large egg whites
  • 1/4 teaspoon cream of tartar
  • 1/4 cup + 2 tablespoons granulated sugar
  • 1/2 cup light corn syrup
  • 1/4 cup water
  • 1/4 teaspoon fine sea salt
  • 1 1/2 teaspoons vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). In a mixing bowl, combine crushed graham crackers, sugar, and salt; mix in melted butter until combined. Press into a baking dish to create an even crust.
  2. Melt the semisweet chocolate chips with sweetened condensed milk in a saucepan over low heat until smooth. Pour over the crust and spread evenly.
  3. Beat egg whites with cream of tartar until soft peaks form, gradually adding sugar until glossy peaks form. Boil corn syrup with water and salt; slowly mix into egg whites until fluffy.
