  • 1 cooked chicken breast, diced

  • 2 tablespoons chopped fresh basil
  • 2 ounces crumbled goat cheese
  • 2 tablespoons vinegar (or chosen alternative)
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey (or maple syrup)
  • 1 tablespoon olive oil
  • Kosher salt and fresh ground black pepper to taste

Instructions

  1. Cook the orzo by boiling water in a large pot. Add the uncooked orzo and follow package directions until al dente. Rinse under cold water in a colander.
  2. In a large bowl, combine the cooled orzo with diced chicken breast, chopped spinach, roasted red pepper, sliced green onion, halved cherry tomatoes, chopped basil, and crumbled goat cheese. Toss gently.
  3. For the vinaigrette, whisk together vinegar (or chosen alternative), Dijon mustard, honey (or maple syrup), olive oil, salt, and pepper in a small bowl until well combined.
