Ingredients

Scale
  • 23 pounds boneless skinless chicken breasts
  • 1 cup sweet chili sauce
  • 1/4 cup low-sodium soy sauce
  • 1/4 cup apple cider vinegar
  • 3 tablespoons corn oil
  • 1/4 cup lime juice
  • 2 cloves garlic (minced)
  • 1 tablespoon fresh ginger (minced)
  • Salt and black pepper to taste

Instructions

  1. In a mixing bowl, whisk together the sweet chili sauce, low-sodium soy sauce, apple cider vinegar, corn oil, lime juice, minced garlic, and minced ginger until well combined.
  2. Place the chicken breasts in a resealable bag or shallow dish and pour the marinade over the top. Ensure all pieces are covered. Seal the bag or cover the dish and marinate in the refrigerator for at least 30 minutes (up to 2 hours for enhanced flavor).
  3. Heat a skillet or grill pan over medium-high heat. Remove the chicken from the marinade and discard any remaining marinade. Season with salt and black pepper as desired.
  4. Cook the chicken for about 5-7 minutes on each side or until fully cooked through (internal temperature should reach 165°F). Allow the chicken to rest for a few minutes before slicing.
