  • 1 cup long-grain white rice
  • 2 cups water
  • 1 lb large shrimp (peeled and deveined)
  • 1 tbsp olive oil
  • 1 tbsp chili powder
  • 1 tsp smoked paprika
  • 0.5 tsp ground cumin
  • 0.5 tsp kosher salt
  • 1 cup diced mango
  • 0.25 cup purple onion (finely minced)
  • 1 tbsp green jalapeno (minced)
  • 2 tbsp fresh green cilantro leaves (chopped)
  • 1 tbsp fresh lime juice
  • 0.5 cup mayonnaise
  • 1 tbsp sriracha
  • 1 large avocado (freshly sliced)
  • 1 tbsp black sesame seeds

Instructions

  1. Rinse the rice under cold water until clear. Combine with 2 cups of water in a pot, bring to a boil, then simmer on low heat for 15 minutes.
  2. In a mixing bowl, coat the shrimp with olive oil, chili powder, smoked paprika, ground cumin, and kosher salt.
  3. Heat a skillet over medium-high heat and cook the seasoned shrimp for about 2-3 minutes on each side until charred.
  4. For the mango salsa, mix diced mango, minced purple onion, jalapeno, cilantro, and lime juice in a separate bowl.
  5. Whisk together mayonnaise with sriracha and lime juice for the drizzle.
  6. Assemble your bowl with rice as the base, followed by shrimp, mango salsa, sliced avocado, and finish with lime-chili drizzle.
