  • 2 cups roasted beets
  • 1 cup cucumber, thinly sliced
  • 1 cup crumbled feta cheese
  • 2 tablespoons fresh dill
  • 2 tablespoons red apple vinegar or lemon juice
  • 3 tablespoons olive oil
  • Salt and black pepper to taste
  • 1 tablespoon honey or maple syrup (optional)

Instructions

  1. Preheat the oven to 400°F. Wrap the beets in foil and roast for 45–60 minutes until tender. Once cooled, peel and cut into bite-sized pieces.
  2. Use a mandoline slicer or knife to thinly slice the cucumber.
  3. In a small bowl, whisk together olive oil, vinegar or lemon juice, optional honey or maple syrup, salt, and pepper.
  4. In a large bowl, combine roasted beets, sliced cucumber, and fresh dill. Drizzle with the dressing and toss gently to coat.
  5. Top with crumbled feta cheese before serving.
