2 cups roasted beets
1 cup cucumber, thinly sliced
1 cup crumbled feta cheese
2 tablespoons fresh dill
2 tablespoons red apple vinegar or lemon juice
3 tablespoons olive oil
Salt and black pepper to taste
1 tablespoon honey or maple syrup (optional)
Instructions
Preheat the oven to 400°F. Wrap the beets in foil and roast for 45–60 minutes until tender. Once cooled, peel and cut into bite-sized pieces.
Use a mandoline slicer or knife to thinly slice the cucumber.
In a small bowl, whisk together olive oil, vinegar or lemon juice, optional honey or maple syrup, salt, and pepper.
In a large bowl, combine roasted beets, sliced cucumber, and fresh dill. Drizzle with the dressing and toss gently to coat.
