  • 1 1/2 cups grape tomatoes (halved)

  • 1 cup kalamata olives (pitted and sliced)
  • 1/2 red onion (diced)
  • 3/4 cup feta cheese (crumbled)
  • 1/4 cup extra virgin olive oil
  • 3 tablespoons red apple vinegar
  • 1 clove garlic (finely chopped)
  • 1/2 teaspoon oregano, dried
  • Salt and pepper to taste

Instructions

  1. Cook the tortellini in salted boiling water according to package instructions until al dente. Drain and rinse under cold water.
  2. While the tortellini cooks, chop the tomatoes, cucumber, red onion, and olives. Combine these with crumbled feta in a mixing bowl.
