  • 1 lb zucchini (shredded)
  • 2 large eggs
  • 1/2 cup breadcrumbs or superfine almond flour
  • 1/2 cup shredded mozzarella cheese
  • 1/4 tsp onion powder
  • 1/4 tsp garlic powder
  • 1/4 tsp salt

Instructions

  1. Preheat your oven to 375°F and line two baking sheets with parchment paper.
  2. Wring out shredded zucchini using cheesecloth until you have approximately 1 packed cup of dry zucchini.
  3. In a mixing bowl, combine dried zucchini with eggs, breadcrumbs or almond flour, mozzarella cheese, onion powder, garlic powder, and salt. Mix well.
  4. Scoop 1/4 cup of the mixture onto each baking sheet, flattening it into a circle about five inches in diameter.
  5. Bake for about 20 minutes until edges are golden brown; let cool slightly before removing from the sheets.
